XENIA – Greene Memorial Hospital and Soin Medical Center Executive Chef Jennifer Ball will offer healthy holiday recipes to provide a complete meal by Christmas. The idea is to give area residents some tasty options for the holidays.

Each Saturday the Xenia Gazette and Fairborn Herald will run one of her recipes which will include a salad, entrée, side and dessert. Look for the next recipe on Saturday.

Holiday Quinoa & Wild Rice Salad

1 c. Quinoa, dry

1 c. Wild Rice Blend, dry

Dressing:

2 T. Orange Zest

2 T. Orange Juice

¾ C. Olive Oil

3 T. Apple Cider Vinegar

2 T. Fresh Basil chopped

3 t. kosher salt

1 t. black pepper

¼ c. Green Onion sliced

1 c. Shredded Kale

½ c. Craisins

¼ c. toasted Almonds

¼ c. sunflower seeds

Directions

Cook Quinoa and Wild rice according to directions on package. Once cooked cooldown immediately. Make the dressing by combine all ingredients, chill. Add rest of ingredients and combine the cooled rice & Quinoa. Serves: 10-15 people.
